The Gas-Strut Hatch and Shutter Combination
Two separate systems handle the serving face, and that is deliberate. The full-width hatch is gas-strut assisted, so one person can raise it single-handed at the start of service and it holds itself open as a canopy over the counter — no props, no ladder, no second pair of hands. Behind it, steel security shutters lock the unit down flat at close of trade. Bars that rely on a single hinged panel for both jobs end up compromising on one of them; here the canopy stays a canopy and the security stays security.
